Fuel consumption flying with the doors "off" on a CH701 is not important.
The CH701 doesn't "cruise"... it sort of hangs around loafing in the sky! ;>) (with or without doors on).
Anything not secured like maps, baseball hats, camera bags will most likely fly out the window at some point in the flight.
As for cutting a camera hole in the door window... I would avoid that because it could end up a source of cracks in the window.
I use a Panasonic Lumix TZ1 camera, set is "aerial photo mode" it has no problem shooting through the cockpit bubble of my CH601HD.

Flying doors off is brill! Expect around 5km/hr difference - if you keep the ball in the middle!

Oh - and you will use the grab handle in the turn so make sure that you have the correct throttle friction... I test fly doors off on first flights - and when you do that first steep turn to the left you are going to get a great view!!!
