The nose "moving" comes from using image stabilization.

The process is to take 5MP images every two seconds, then combine them into a timelapse movie at a low frame rate. From there, the video got fed into Microsoft Hyperlapse for a very advance form of stabilization.

The effect is that it stabilizes the major portion of the image (the terrain) and "moves" the nose.

That's just awesome - and a great video. The shark mouth coming in and out of the video adds a great touch!
