I set up my throttle to operate with my left hand, and a flap rocker switch sitting just above it so that it can be operated with the thumb.  The co-pilot position has the same throttle and flap rocker setup with the right hand.  Both positions can operate throttle and flaps and keep their hand on the center stick.  Both flap switches are active at all times, through a composite designs trim relay board.  I used a set of diodes to handle the limit switch current reversal, instead of a DPDT switch.  It works like a charm.  This is going in an 801, so the panel is wider than the 701 and 750.
